These mango and passionfruit ice blocks take five ingredients and about ten minutes of work, and they hide a decent serve of greens behind the fruit.

They are a good way to use a greens powder if you do not enjoy drinking one, and they keep in the freezer for weeks.

Ingredients

  • 1 serve greens powder, mango or tropical flavour if you have one
  • 1/2 cucumber, regular size
  • A handful of spinach
  • 1/2 cup pineapple
  • 1/2 cup mango, fresh or frozen

Method

  • Blend all the ingredients until completely smooth. Any spinach left in pieces will show up in the finished block.
  • Pour into ice block moulds, leaving a little space at the top for expansion.
  • Freeze for at least four hours, or overnight for a firmer set.
  • To release, run the mould under warm water for a few seconds.

Which greens powder should I use?

Whichever one you already have. The fruit does most of the flavour work here, which is exactly why this recipe suits a greens powder you find hard to drink on its own.

A tropical or unflavoured blend works best. A strongly minty or berry-flavoured one will fight the mango.

Can I make these without a greens powder?

Yes. Leave it out and add a little extra spinach and half a banana for body. You will lose the nutrient top-up but the ice blocks still work as a fruit ice block.

Equally, you can swap the greens powder for a scoop of vanilla protein powder if what you want is a higher-protein version.

How long do they keep?

Up to three months in the freezer in a sealed container or bag. They are best in the first few weeks, after which ice crystals start to affect the texture.

If they are sticking in the mould, a few seconds under warm water is all it takes.

Are these actually healthy?

They are fruit, vegetables and a greens powder, frozen. That makes them a better choice than a shop-bought ice block, most of which are largely sugar and water.

They are not a health product though, and it is worth being clear about that. Fruit carries natural sugars, so these are a refreshing snack rather than something to eat by the handful. Treat them as a nicer version of a frozen treat, not as a supplement.

Can I make them dairy free or vegan?

They already are. There is no dairy in the recipe at all, and every ingredient is plant based, so the only thing to check is your greens powder.

If you want a creamier result, blend in a few tablespoons of coconut milk. That will make them softer straight from the freezer.
