Method

  1. Pop the popcorn kernels in an air popper into a large bowl.
  2. In a small saucepan, combine the cashew butter, Adrenal Switch and coconut oil over medium heat. Bring to the boil for 2 to 3 minutes. Remove from heat and let it cool for 2 minutes. It needs to stop boiling before it goes on the popcorn.
  3. Pour the caramel over the popcorn and stir to coat evenly.
  4. Serve.

How much cashew butter and coconut oil?

The original recipe does not specify, so treat what follows as our suggestion rather than part of the recipe.

A workable starting point for a large bowl of popcorn is roughly 3 tablespoons of cashew butter to 1 tablespoon of coconut oil, with the scoop of Adrenal Switch. That gives a sauce thin enough to pour and coat without soaking the popcorn.

Adjust from there. More coconut oil thins it; more cashew butter thickens it and makes it cling. If the sauce seizes into a paste, a little extra coconut oil over low heat brings it back.

Why did my popcorn go soggy?

The sauce went on too hot, or there was too much of it. Both are easy to avoid.

  • Let it stop boiling. The two-minute rest in the recipe is doing real work. Boiling sauce steams the popcorn from the inside and it collapses.
  • Use less than feels right. Drizzle in stages, tossing between each, rather than pouring it all at once.
  • Discard the unpopped kernels first. Tip the bowl and let them settle to the bottom before saucing. Biting one is genuinely unpleasant.
  • Spread it out to set. Tip the coated popcorn onto a lined tray in a single layer rather than leaving it heaped in the bowl.

Is popcorn good before a workout?

Plain popcorn, reasonably. This version, not really, and the difference is the sauce.

Plain air-popped popcorn is mostly carbohydrate, light, and easy to eat, which makes it a passable pre-training snack. Once you add cashew butter and coconut oil you have added a lot of fat, and fat slows digestion. That is the opposite of what you want sitting in your stomach mid-session.

Popcorn is also quite high in fibre for its weight, which is another reason a large bowl before training is a gamble.

Why do lifters eat popcorn?

Volume. It is the honest answer.

Popcorn is extremely light for its size, so a very large bowl of air-popped popcorn is a small number of calories. For anyone dieting, that combination of high volume and low energy density is genuinely useful: it fills you up and satisfies the urge to eat something while watching television.

It is also cheap, high in fibre, and a whole grain. None of that makes it a performance food. It makes it a good snack for people who are hungry, which during a cut is most people.

Add butter, oil or a caramel sauce and the volume advantage disappears fast. That is worth knowing about this recipe specifically.

Is popcorn good for building muscle?

Not directly. Popcorn has very little protein and none of it high quality.

What it can do is help you eat enough overall, which matters, and it is a reasonable carbohydrate source around training. But muscle growth needs adequate protein and progressive overload, and popcorn contributes to neither.

If you want a snack that does contribute, pair it with something. Popcorn alongside a protein shake or some Greek yoghurt is a far more useful combination than popcorn on its own.

What should I eat two hours before the gym?

With two hours you have enough time for a proper meal, which is the easiest window to work with.

  • Chicken or fish with rice or potato. The standard, and it works.
  • Oats with fruit and a scoop of protein. Good for morning sessions.
  • A sandwich or wrap. Unfashionable and perfectly effective.

Keep fat moderate rather than high, since it is the main thing that slows gastric emptying. Beyond that, two hours is plenty for most people to digest a normal meal comfortably.

Can I make it without an air popper?

Yes. A large pot with a lid, a tablespoon of neutral oil and a single layer of kernels over medium heat. Shake it occasionally and take it off when the pops slow to a few seconds apart.

It uses slightly more oil than air popping, which matters a little given the sauce that follows. Microwave popcorn works too but is usually already salted and buttered, which makes the whole thing too much.

How long does it keep?

Same day, ideally within a few hours. Coated popcorn draws moisture from the air and softens overnight.

If you must store it, keep it airtight at room temperature and accept it will be chewier tomorrow. It does not freeze.
